Abstract:
Nitrate and nitrite are widely existed in diet and its security has attracted more and more attention of the people. We reviewed the sources of nitrate and nitrite in diet and the relationship between them and human diseases in order to raise the awareness of nitrite and nitrite in diet. This will help to guide people of a reasonable diet.
