L-丙氨酸是一种具有特殊香味和甜味的氨基酸,可作为食品增味剂广泛应用于饮料、奶制品、糕点及各种调味料中。L-丙氨酸可提高食品的营养价值,改善食品的风味,具有广阔的发展前景和巨大的市场潜力。本文对L-丙氨酸在食品中的作用特点进行了分析。
L-alanine is a kind of amino acid with special fragrance and sweet taste, which can be used as food enhancer and wildly applied to beverage, dairy, cakes and all kinds of seasonings. L-alanine can improve the nutritional value and the flavor of foods. It has wide development prospect and great market potential. In this paper, the characteristics of L-alanine in food were analyzed.
