Abstract: Gallstone disease is a common chronic digestive disorder whose onset and progression are closely linked to genetic and various environmental factors. Numerous epidemiological studies have shown that dietary factors play a significant role in the formation of gallstones and constitute modifiable risk factors. This systematic review summarizes recent research on the association between different dietary patterns and the risk of gallstone disease. It also outlines potential mechanisms of action, including inflammatory responses, oxidative stress, gut microbiota, insulin resistance, and hepatic metabolism, with the aim of providing a basis for dietary prevention and nutritional interventions for gallstone disease.
