产教融合背景下食品科学与工程专业劳动教育“三链协同”育人模式探索——以成都大学杂粮加工实践课程为例
Exploring the “Triple-Chain Synergy” Labor Education Model for Food Science and Engineering Programs under the Industry-Education Integration Background—A Case Study of the Coarse Grain Processing Practice Course at Chengdu University
摘要: 在新时代劳动教育改革与产教融合政策深度推进的双重背景下,应用型本科高校食品科学与工程专业劳动教育面临专业认知与产业实践脱节的深层困境。本文以成都大学食品与生物工程学院开设的劳动教育实践–杂粮加工实践课程为研究案例,提出“专业链–产业链–劳动”三链协同育人框架,探讨“认知–操作–创新–转化”四阶递进式教学模式的设计逻辑与实施路径。该框架以专业链为知识基础,以产业链为实践情境,以劳动链为价值导向,通过三链融合促进学生专业素养与职业劳动能力的协同发展。本研究依托成都市现代农业产教融合实践中心,课程将食品科学、农业生产与劳动价值教育有机整合,形成覆盖从杂粮种植认知到产品创新转化的完整闭环。研究发现,通过将产业真实项目嵌入劳动实践环节,不仅有助于强化学生的专业技能与职业素养,还能促进学生对食品行业的认知认同。本文研究成果以期为同类院校的劳动教育改革提供具有参照价值的实践经验。
Abstract: Against the dual backdrop of deepening labor education reform and the advancement of industry-education integration policies in the new era, labor education in food science and engineering programs at application-oriented undergraduate universities faces a fundamental disconnect between professional knowledge and industrial practice. Taking the labor education practice course on coarse grain processing offered by the College of Food and Biological Engineering at Chengdu University as a case study, this paper proposes a “Triple-Chain Synergy” framework integrating the Professional Chain, Industrial Chain, and Labor Chain, and examines the design logic and implementation pathways of a four-stage progressive teaching model of “Cognition-Operation-Innovation-Transformation”. In this framework, the Professional Chain serves as the knowledge foundation, the Industrial Chain provides the practical context, and the Labor Chain functions as the value orientation; through the integration of all three chains, students’ professional competencies and vocational labor capabilities are developed in tandem. Grounded in the Chengdu Modern Agricultural Industry-Education Integration Practice Center, the course organically integrates food science, agricultural production, and labor value education, forming a complete loop that spans from coarse grain cultivation awareness to product innovation and commercialization. The study finds that embedding real industry projects into labor practice not only strengthens students’ professional skills and vocational literacy, but also deepens their cognitive identification with the food industry. The findings of this study are intended to provide practically replicable experience for labor education reform in similar institutions.
