摘要: 以红茎和绿茎冰菜为实验材料,对其主要营养成分及抗氧化活性进行测定。结果表明,红茎冰菜在脂肪、总膳食纤维、总黄酮、总酚、多糖、总氨基酸、钙、镁、钾和铁含量高于绿茎冰菜,在灰分、苹果酸、肌醇和钠含量低于绿茎冰菜,在蛋白质、原花青素、维生素E和β-胡萝卜素含量基本相同,嫩茎叶提取液对DPPH•自由基、•OH、O2-•的清除能力高于绿茎冰菜。综合评价,红茎冰菜的营养价值比绿茎冰菜高。
Abstract: 以红茎和绿茎冰菜为实验材料,对其主要营养成分及抗氧化活性进行测定。结果表明,红茎冰菜在脂肪、总膳食纤维、总黄酮、总酚、多糖、总氨基酸、钙、镁、钾和铁含量高于绿茎冰菜,在灰分、苹果酸、肌醇和钠含量低于绿茎冰菜,在蛋白质、原花青素、维生素E和β-胡萝卜素含量基本相同,嫩茎叶提取液对DPPH•自由基、•OH、O2-•的清除能力高于绿茎冰菜。综合评价,红茎冰菜的营养价值比绿茎冰菜高。 The main nutrients and antioxidant activity of red and green stem Mesembryanthemum crystallinum were determined. The results show that, the contents of total flavonoids, total phenols, total amino acids, calcium, magnesium, potassium and iron in total dietary fiber, total dietary fiber, total flavonoids, total phenols, total polysaccharides and total amino acids in red stem Mesembryanthemum crystallinum were higher than that of green stem Mesembryanthemum crystallinum. The contents of ash, malic acid, inositol and sodium in red stem Mesembryanthemum crystallinum were lower than that of green stem Mesembryanthemum crystallinum. The contents of protein, procyanidins, vitamin E and beta carotene levels were about the same. DPPH• free radical, •OH, O2-•scavenging ability of extracts from young stem and leaves in red stem Mesembryanthemum crystallinum were higher than that of green stem Mesembryanthemum crystallinum. According to the comprehensive evaluation, the nutritive value of red stem Mesembryanthemum crystallinum was higher than that of green stem Mesembryanthemum crystallinum.
