摘要: 目的：以三七须根为原料经提取得到三七须根提取物，以食盐、味精、细砂糖为基础调味料，三七须根提取物、草果粉、八角粉、黄姜粉、白胡椒粉为基础原料得到便于烹饪、快速方便、营养健康的三七须根炖鸡汤料包。方法：通过正交实验设计各原料对炖鸡汤料包口感的影响，以评分情况确定最佳配方。结果：通过正交实验及感官评分得到原料中三七须根提取物对口感影响最大，胡椒粉的影响相对较小，三七须根炖鸡汤料包的最佳配方为食盐8 g、味精2 g、细砂糖0.1 g、三七须根提取物3 g、八角粉0.3 g、草果粉0.3 g、黄姜粉0.1 g、白胡椒粉0.2 g时的口感最佳。结论：最终成品为14 g一袋的三七须根炖鸡汤料包，复水性好、口味新奇、营养丰富、咸淡适宜，用于久病或体虚神疲乏力者，常食可强身延年，具有滋补作用，补脾胃、辅助降血脂。
