浅谈蜂蜜生产与质量控制

A Brief Analysis on Honey Production and Quality Control

摘要: 蜂蜜产品的质量受到蜜源、加工工艺和质量标准等因素的影响。在蜂蜜的生产过程中从源头把控蜜源质量，在加工过程中控制工艺条件，有利于提高蜂蜜品质。本文介绍了我国蜂蜜产品的执行标准的检验项目及相关限量值，比较了国内外蜂蜜标准检验项目及限量值的差异，以期为蜂蜜相关标准的修订及行业的监管提供参考。

Abstract: The quality of honey products is mainly affected by source, processing technology and quality standard. Honey quality can be improved by optimizing source control in production and condition in process. Here, we discuss inspection items and limit value in current standard of honey in China. Furthermore, we make a comparison between domestic and foreign standards of inspection items and limit value. The aim of this review is to provide a reference for honey relevant standard revision and market supervision.
