摘要: 高校食堂作为服务师生的重要场所,因供餐体量大、用餐群体敏感、经营模式多样、责任主体多元等其自身的特殊性,面临诸多现实挑战,其食品加工操作链条长、风险源隐蔽性强、事件突发时影响面广,传统的监管模式在处理问题时愈发显得力不从心。随着信息技术的迅速发展,大数据的应用已成为提升餐饮业风险识别防控能力的新型力量,本文剖析当前校园食堂食品安全管理存在的风险痛点,从构建风险监测预警体系、定位薄弱环节予以优化方向、推动从业人员从“他律”到“自律”三个维度提出对策思考,旨在为持续提升食品安全现代化治理水平提供参考。
Abstract: As an important service venue for teachers and students, university canteens face numerous practical challenges due to their inherent particularities such as large-scale meal supply, sensitive dining groups, diverse operation modes and multiple responsible subjects. Featuring a long food processing chain, highly concealed risk sources and wide-ranging impacts when incidents occur, traditional supervision modes are increasingly inadequate in addressing relevant problems. With the rapid development of information technology, the application of big data has emerged as a new driving force for improving the risk identification, prevention and control capabilities of the catering industry. This paper analyzes the current risk pain points in food safety management of campus canteens, and puts forward countermeasure suggestions from three dimensions: constructing a risk monitoring and early warning system, identifying weak links to determine optimization directions, and promoting the transformation of practitioners from heteronomy to autonomy. The purpose is to provide a reference for continuously improving the modernized governance level of food safety.
