摘要: 中华绒螯蟹(Eriocheir sinensis)因其独特风味与丰富营养而备受消费者青睐。然而,其生产受季节性和地域性限制,如何有效保藏已成为产业发展的关键问题。速冻技术能够迅速降低温度,抑制微生物繁殖与酶活性,从而延长货架期并扩大销售范围,是突破上述局限的重要手段。文章聚焦于中华绒螯蟹在速冻过程中的水分迁移特性及其对品质的影响,系统探讨水分迁移对蟹肉口感、风味、营养成分及微观结构等品质的作用机制,如导致口感变差、风味改变、蛋白质变性与营养流失以及微观结构受损等。此外,还探讨了目前研究中存在的问题以及未来的研究方向,旨在为提高速冻中华绒螯蟹的品质和延长其货架期提供理论依据。
Abstract: Eriocheir sinensis is favored by consumers owing to its distinctive flavor and abundant nutrients. Nevertheless, its production is restricted by seasonality and geographical conditions, and effective preservation has become a critical issue for industrial development. Quick-freezing technology serves as a vital approach to overcome these limitations. It can rapidly lower temperature, inhibit microbial proliferation and enzyme activity, extend shelf life, and broaden marketing scope. This review focuses on the water migration characteristics of Eriocheir sinensis during quick-freezing and their impacts on quality. The mechanisms underlying the effects of water migration on multiple quality attributes of crab meat, including texture, flavor, nutritional composition, and microstructure, are comprehensively discussed. Water migration may trigger undesirable texture deterioration, flavor variation, protein denaturation, nutrient loss, and microstructure damage. Furthermore, existing challenges in current research and prospective research directions are summarized, aiming to provide theoretical support for improving the quality and extending the shelf life of quick-frozen Eriocheir sinensis.
