    摘要: 玉米赤霉烯酮是镰刀霉毒素的代表,广泛存在于霉变的玉米、高粱、小麦、燕麦、大麦等谷物及其制品中。玉米赤霉烯酮污染食品和饲料后,将会带来严重的食品安全问题,威胁人类健康。近年来发展了很多分析检测玉米赤霉烯酮的方法,主要有薄层色谱法、(超)高效液相色谱法、高效液相色谱–质谱联用法、气相色谱法、毛细管电泳法、酶联免疫吸附测定法、胶体金免疫层析法和时间分辨荧光免疫分析法。本文概述了这些检测方法的特点及应用,并分析了现有检测方法存在的问题和挑战。 Zearalenone is the representative of fusarium, which widely presents in moldy corn, sorghum, wheat, oats, barley and their products. The food and feed contaminated by zearalenone will lead to serious food security issues and threat to human health. In recent years, several determination methods of zearalenone have been developed, mainly including thin layer chromatography, (ultra) high performance liquid chromatography, high performance liquid chromatography—coupled with mass spectrometry, gas chromatography, capillary electrophoresis, enzymatic linked immu-nosorbent assay, colloidal gold immune chromatography and time-resolved fluorescence immu-noassay. This article outlines the features and applications of these determination methods, and analyzes the problems and challenges of the existing determination methods of zearalenone.
