预制菜风险监测分析与监管策略研究
Research on Risk Monitoring Analysis and Regulatory Strategies of Prefabricated Dishes
摘要: 本论文基于对预制菜的专项风险监测,对以速冻食品为主的100批次预制菜进行测试,涵盖水产类和畜禽类多种品类,分析防腐剂、色素、兽药残留等指标。研究发现预制菜存在以次充好、防腐剂和色素违规添加、非食用物质违法添加及兽药滥用等问题,并深入剖析成因。针对这些问题,从政策补位、靶向监管、技术赋能等方面提出监管策略,旨在为保障预制菜食品安全、推动行业健康发展提供参考。
Abstract: This paper conducts a special risk monitoring of prefabricated dishes, testing 100 batches of prefabricated dishes mainly consisting of frozen foods, covering various categories of aquatic products and livestock/poultry products. It analyzes indicators such as preservatives, pigments, and veterinary drug residues. The study reveals issues in prefabricated dishes, including passing off inferior products as superior ones, illegal addition of preservatives and pigments, unlawful use of non-edible substances, and abuse of veterinary drugs, while deeply analyzing their causes. Aiming at these problems, regulatory strategies are proposed from aspects such as policy supplementation, targeted supervision, and technological empowerment, with the aim of providing references for ensuring the food safety of prefabricated dishes and promoting the healthy development of the industry.
